Kumara (Kumala Or Sweet Potato) Pie
Ingredients:

3 lbs kumara (kumala or sweet potato)

2 tsp brown sugar

½ tsp cinnamon

2 eggs (beaten)
-
3½ tbsp butter
-
pineapple juice and pineapple rings
-
cinnamon (dash)
-
nutmeg (dash)
Method:

Preheat oven to 350 degrees

Boil kumala until tender and drain excess water

Mash with butter and beaten eggs and pineapple juice
-
Place mixture into a greased oven dish and decorate with pineapple rings

Sprinkle lightly with brown sugar, cinnamon and nutmeg

Bake for 30-40 minutes or until golden brown
Serve with ice-cream or whipped cream
