Kumara (Kumala Or Sweet Potato) Pie

  • 3 lbs kumara (kumala or sweet potato)
  • 2 tsp brown sugar
  • ½ tsp cinnamon
  • 2 eggs (beaten)
  • 3½ tbsp butter
  • pineapple juice and pineapple rings
  • cinnamon (dash)
  • nutmeg (dash)
  • Preheat oven to 350 degrees
  • Boil kumala until tender and drain excess water
  • Mash with butter and beaten eggs and pineapple juice
  • Place mixture into a greased oven dish and decorate with pineapple rings
  • Sprinkle lightly with brown sugar, cinnamon and nutmeg
  • Bake for 30-40 minutes or until golden brown
Serve with ice-cream or whipped cream
